It's not every day your 5th grade teacher finds and adds you on Facebook! I was so excited to reconnect with my favorite elementary school teacher. She is one of the few people who helped shape me into the person I am today. Growing up in an Armenian community wasn't always easy and thinking "outside the box" used to be very unconventional during my youth and more often than not I stuck out like a sore thumb amongst my peers. But this teacher embraced my "weirdness" and encouraged my imagination
The most common question a baker will ask is: how many cake tiers do I need for X amount of guests? Cake tiers range from 4" in diameter to 18+" (it must be pretty awesome to have an oven large enough to accommodate 20" diameter pans!) and are usually 4-5" in height.
When I was an amateur baker I took a lot of care in measuring my cake pans to calculate the correct servings. Thanks to my engineering background I even used math for my calculations! My equation was simple for a 2" tall cake:

I recently had the honor of having my cake featured in a photo shoot by Spot N Photo! The cake is a 4 tiered wedding cake and the top most tiered was made using edible 23k silver! I recently designed an entire dessert table for a wedding. Part of the table included the Death Star groom's cake for a huge Star Wars fanatic. When I say huge, I mean HUGE! I was told he even dressed up as Han Solo for the couple's first dance!! Here is a picture of their wedding countdown:

Valentine's day can be a little cliché - a box of chocolates being one of the biggest. I don't know about you, but I've always appreciated romance a lot more when effort was put behind a gesture. This Valentine's day treat your loved one with a sweet surprise that will not only please both your palates, bellies and chocolate loving souls, it will make it more personal and memorable (besides, we all know the fastest way to win a person's heart is through their stomachs).

Ingredients:
1 whole egg
4 egg whites
1/4 cup honey
2 tbsp coconut flour
1/2 tsp baking powder
1/4 tsp salt
1 package sweetened shredded coconut

Today I remembered I had left over heavy cream and decided to make dark chocolate pudding! Feel free to substitute the dark chocolate with milk chocolate, but make sure you reduce the sugar by half to compensate sweetness!

Ingredients
1 cup milk
2 cups heavy cream
1 cup coconut sugar
1/2cup unsweetened Ghiradelli dark chocolate
2 tbsp Corn Starch
1/2 stick organic butter
